Michael Tempesta and co-workers at Phenolics (and Bruker, Plant Analytica, Vertex Pharmaceuticals, John Jay Criminal Justice) have reported on the isolation of some aromatic compounds from cinnamon that had micromolar inhibitory activity against COX-2 (cyclooxygenase-2), the enzyme responsible for pain and inflammation.
